Greek green beans (φασολάκια)
Prep Time 15 minutes
Cook Time 35 minutes

Ingredients

  • 16 oz. Green beans 500 g
  • 2/3 cup Crushed tomatoes
  • 6 Yellow Potatoes Use potatoes of your choice.
  • 1 Onion Chopped
  • 1 clove Garlic Minced
  • Fresh parsley To taste
  • 2 tsp Oregano
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 Bay leaves Optional
  • 1 Cinnamon Stick Optional
  • 2/3 cup Water
  • 4 tbsp Extra Virgin Olive Oil 60 ml

Instructions

  • Heat up a large pot with olive oil over medium heat.
  • Trim the ends of your green beans and cut your potatoes into small wedges. Set aside.
  • Chop one large onion and then put in pot to saute.
  • Add minced garlic and saute.
  • Once onions and garlic are soft, add your green beans and potates to the pot.
  • Stir everything together.
  • Add crushed tomatoes, as well as the water into the pot, and mix.
  • Add salt, pepper, oregano, bay leaves, and a cinnamon stick.
  • Cover pot and let the food simmer on low heat for 30 minutes.
  • Remove cover and cook 5 minutes until the liquid reduces. (We do not want to remove all the liquid. We just want to reduce the sauce slightly and then thicken.)
  • When done, you will have tender green beans and potatoes, and you should still have some liquid in your pot.
  • Serve alongside feta cheese and fresh bread. Make sure to dip the bread into your sauce as you eat! Enjoy! Opa!
