Heat up a large pot with olive oil over medium heat.
Trim the ends of your green beans and cut your potatoes into small wedges. Set aside.
Chop one large onion and then put in pot to saute.
Add minced garlic and saute.
Once onions and garlic are soft, add your green beans and potates to the pot.
Stir everything together.
Add crushed tomatoes, as well as the water into the pot, and mix.
Add salt, pepper, oregano, bay leaves, and a cinnamon stick.
Cover pot and let the food simmer on low heat for 30 minutes.
Remove cover and cook 5 minutes until the liquid reduces. (We do not want to remove all the liquid. We just want to reduce the sauce slightly and then thicken.)
When done, you will have tender green beans and potatoes, and you should still have some liquid in your pot.
Serve alongside feta cheese and fresh bread. Make sure to dip the bread into your sauce as you eat! Enjoy! Opa!
