Instructions
Preheat oven to 400 degrees.
Place tomatoes in large baking dish.
Pour olive oil on tomatoes.
Season the tomatoes with salt and pepper, then give it all a good mix to make sure it's all spread out.
Place the feta cheese in the center of the baking dish.
Use a baking brush to spread the olive oil and seasoning on the feta cheese.
Place the baking dish in the oven and cook for 35 - 40 minutes. Your dish will be ready when the tomatoes have burst and the feta has softened.
Boil the pasta according to the directions on the package.
When the feta and tomatoes are ready, break the tomatoes and mix with the feta cheese. The cheese should be soft at this point and it should mix easily to become a creamy sauce.
Add the pasta to the sauce and toss until everything is well combined.
Garnish with fresh basil.
Notes
We used 10.5 oz of block feta cheese for this recipe, but an 8 0z. block also will work well.
